Wild Mushroom Crostini




I must have writer’s block or some thing because I could not think of anything to write about today.

But I have this fantastic quick and easy recipe I just HAVE to share with you.

I heart mushrooms any way, any how. So I would tell you every mushroom recipe is great.

However,  these crostini are really REALLY REALLY fantastically delectable!!!!

You can cut each crostini into smaller pieces for an appetizer; or in half to make 8 crostini.

Best of all it they are quick and easy to make.

This is what you need for 4 people:

About ½ pound wild mushrooms ( I used shitake, oyster, and bella.)

1 – 2 teaspoon olive oil

1 tablespoon butter

1 shallot

2 garlic cloves

¼ cup dry white wine

2 tablespoons lemon juice

A pinch of thyme


4 slices of crusty bread

Cream Cheese ( about 8 tablespoons)

Salt and pepper to taste [Not pictured]


Here is what you do:

Clean, trim the stems, and slice the mushrooms.



Dice the shallot. Press the garlic. Chop the chives. Cut the lemon in half. Pour the wine in a cup.


Over low heat melt the butter in 1 tablespoon of olive oil.


Add the shallot and garlic and cook until fragrant.


Increase the heat to moderately high.

Add the mushrooms to the skillet and cook the mushrooms about 2 – 4 minutes. Do not over cook. Add more butter if necessary.


Stir in the wine, squeeze a good squirt of lemon juice. Add a pinch of thyme, and salt and pepper to taste.


NOTE:  When you add the wine the aroma is simply divine!!!!  You can stop here and just eat the mushrooms as a side dish for any meal.

Lower the heat under the mushrooms. Then lightly toast the bread and spread with the crème cheese.



Spoon the mushrooms on toast, and sprinkle with the chives.


Drizzle with some olive oil. You do not need to use the olive oil………however, it adds a rich depth to the crostini that is simply heavenly!
