Featured Recipe      Avocado Toast with Bacon and Eggs

Almost exactly one year ago I shared one of my favorite breakfasts with you, Avocado Toast.

As long time and regular readers here know, since I have retired I don’t buy magazines anymore. They are just way too expensive. Plus magazines these days are, for the most part, just a gigantic catalog with never-ending paid advertisments.

If I want to look at one I do one of two things. 1.) I get them for free at the library, or 2.) when grocery stores make me stand in line too long I read them while waiting to get to the cashier.

I was looking at a magazine in the grocery store line recently when I saw a beautiful thing. I saw Avocado Toast with bacon and eggs.

Oh My!!!!!

Now how divine does that sound? I did not have a long enough wait in line  to read the recipe. However, the picture was all I needed. 

Using the recipe I shared with you last May, I simply added bacon and egg for today’s recipe. 

I try to keep my Recession Buster Recipes to anything under $1.50 per person. This recipe is $1.56 per person. I am calling it a Recession Buster Recipe© anyway.

This is what you will need for 3 people:

1 avocado

3 eggs

6 slices of bacon

3 slices bread

½ lemon

3 pats of butter – optional

Olive oil

Salt and pepper to taste

Here is what you do:

Place the bacon in a skillet and cook slowly over medium low heat until crisp.

Cut the avocado in half.

Remove the pit. There are several ways to do this. You can use a spoon. You can insert a knife firmly into the seed and rock it back and forth till it becomes loose. If you need further direction and pictures or video you will find it here.

The nice thing about this recipe is you do not have to worry about damaging the avocado when you remove the pit because you are going to mash it up anyway!!

Some pits are harder to get out than others. Today’s was a toughie. It broke, but I finally removed it.

Then using a spoon scoop all of the flesh out of the skin and place it in a bowl.

Immediately squirt the  lemon juice on the avocado to prevent it from browning.

Add some salt and pepper to the avocado. Using a fork cut the avocado into small bits and mash it a bit as well. You can use a potato masher if you prefer.

Continue mashing with a fork and stirring the avocado with a spoon until you get it as smooth as you can.  If you are using more than one avocado you may want to use a processor.

Mash and Stir. Mash and stir. Stir and mash, mash, mash…….get a little Latin beat going. Now we’re cooking.

By now the bacon should be done. Remove the bacon from the skillet and drain on paper towels.

Add your eggs to the skillet and cook over medium low heat until done to your liking.

NOTE: The secret to cooking sunny-side up eggs is to cook slowly over low heat.  Once the eggs are in the skillet just let them alone. Let them do their thing. When they are semi-set you can loosen them from the bottom of the  skillet with a very thin spatula. Just slide the spatula under them. Let them finish cooking.

When the eggs start geting a light brown crust around the edges they are done.


While the eggs are cooking toast your bread. You can use any kind of bread you want. I used a whole grain bread.

When the bread is toasted and if you are going to use it, butter it.

Then spread some of the avocado over the bread. Drizzle just a teeny-tiny bit of olive oil over the top. If you like it spicier sprinkle some red pepper flakes.

Top the avocado toast with 2 slices of the bacon…………………..

………………… and one fried egg.

Ladies and Gentlemen… I present McAvocado Breakfast Sandwich:

Serve with some fruit. You can use a knife and fork. I Just pick it up with my hands and dig right in. I love to break the yolk. Egg yolk and avocado mash is heavnly.
