The Never Ending Winter

 

As many people have experienced this year, it was a cold spring here. Or a long winter, depending on how you want to look at it. It is the glass half full phenomena. Here in Columbus, Ohio it was like being on a crazy teeter-totter. Up and down. Up and down. Up and down. It was literally freezing one day warm the next.

And we did not experience the worst of it. As I write this it is snowing in the far Midwest again today.

There was not much to photograph this year. Spring flowers bloomed sporadically. Trees budded out slowly. Our magnolia trees froze one night when temperatures dipped below freezing.

In my almost 67 years on this earth I have never seen bare trees this late in the year. This picture was taken around 10:00 a.m. EDT on May 1, 2013.

Nevertheless I did get out a few days and took a few spring pictures the last couple of weeks.

By the time the flowering trees burst forward with their kaleidoscopes of color yesterday I was content to simply soak it in it and took no pictures.

So below is spring moving slowly through the Columbus area. Pictures were taken in the lovely north eastern suburb of Westerville, Ohio:

Hanby House

IMG_3931

Hanby House, a few blocks east of Alum Creek Park North, is full of history.

It was built by Bishop William Hanby in the 1840’s. Bishop Hanby was one of the strongest anti-slavery leaders during the Civil War period. Hanby House was one of six houses on the Underground Railroad in the Columbus area. It has been reported that none of the run away slaves under Bishop Hanby’s protetction were ever caught.

Bishop Hanby was also one of the founders of Otterbein University in Westerville.

Bishop Hanby’s son, Benjamin, made a name for himself as well. He composed the anti-slavery song, Darling Nelly Gray as well as a song many, if not most of us sing or at least hear every year, Up On the Rooftop, that prenniel Christmas song.

The Hanby House is on the National Register of Historic Places.

Otterbein University

OtterbeinCollege is one of seven colleges in the Greater Columbus area.

Otterbein was the first college in the nation to have female faculty and students.

It was also one of the first to admit blacks. The first in the nation to actually admit blacks was also in Ohio at Oberlin College near Cleveland.

I Don’t Want To Cook Today!

Do you ever feel like this?

Sometimes I just don’t feel like cooking.  Sometimes I am just lazy. And today was one of those days.

I don’t want to take out a pot. I don’t want to take out one pan. Skillets are a no-no too.

I don’t want to turn on a burner. The oven is off limits too. Microwave; not doing it either!

But I still want something that has loads and loads of flavor too. Don’t want much, do I?

It’s just me, you know.

Except for when I have company I cook just for me, myself, and I.  And I don’t have company every night of the week.

Sometimes I want some thing that is even easier than quick and easy. No fuss eats that don’t dirty up a lot of dishes, that don’t take up any time, but is at least one notch above fast food.

Today I don’t want the entire kitchen clean up thingies either!!

Eat and run I call it.

Simple.

Simpler.
Simplest.

Plus today is May Day. The sun is shining. Temps are mild. I want to get out, walk in the park, sit on my patio and plan my summer garden, and enjoy the weather, not be a kitchen slave.

Toady’s recipe also makes a nice appetizer or party dip with crackers and veggies.

How did you enjoy May Day?
This is what you will need for 4-6 Tuna Toasts

1 small can tuna

4 flat anchovies

1-2 tablespoons fresh lemon juice (about ½ lemon)

1 tablespoons capers drained

Bread or crackers of your choice

Drizzle of olive oil

Salt and pepper to taste

Here is what you do:

Drain the tuna and place in a bowl.

Dice the anchovies……………….

…………….and add to the sweet  little devils to the tuna.

Squeeze the lemon juice into the bowl.

Add the capers and some salt and pepper to taste if desired. There is enough salt for me in the anchovies and capers. But I do add some pepper.

Gently mix well.

Lightly toast the bread.

Place a tablespoon or so of the tuna mixture on each piece of toast.

Drizzle with some olive oil….

Serve with some salad or crudités and/or soup. Or do what I did……pour yourself a glass of your favorite wine and go sit outside on the patio and soak up some sunny warm spring weather

VARIATION: Do not toast the bread. Just place a spoonful or two on each piece of bread, top with some shredded cheese of your choice, put in a toaster oven until cheese melts. YUM!

How many toasts you can make depends on the size of the bread slices.

  • Is it our fault because we’re enjoying really mild weather down here and it’s only 29 days til winter? If so, sorry.

    I love tuna toast and I do the same thing sometimes. 🙂

  • Nice photos. Today the buds started opening on our lilac tree, still tightly folded buds on the maples and walnuts near the house, haven’t had time to walk down to the bush to look at the Ash, cedar, oak and others whose names I have not yet learned. I grew up with Eucalyptus, Jacaranda, Flamboyant, Msasa, Acacia and all the other Indigenous trees of Africa.

      When I lived in California I fell in love with Jacaranda trees. They are the most beautiful trees on earth. I keep videos of them in a file on my computer and when winter gets me down I watch them.

  • Such a cool post! Love the photos. I know it’s cold there but I’m glad the Midwest is no longer suffering a drought. What interesting factoids too. And I made a no-cook supper last night using tuna as well. Such an easy tasty protein!
