Featured Recipe    Cubed Steak With Mushroom Sauce

This is an inexpensive yet easy and quick meal to make.

Cubed steaks, or minutes steaks as some folks call them, are just what their name implies. They are super thin and therefore cook very quickly. This is ideal for week nights when time is at a premium.

Therefore, you will want to get everything prepped and ready first to add to the skillet quickly as soon as the meat is done cooking  so that it does not get cold.

This is what you will need for 4 people:

4 cube steaks

3 tablespoons butter divided

1 – 8 ounce package mushrooms, sliced

1 small sweet onion

1 cup sour cream

Chopped chives*

Salt and pepper to taste

*Or parsley

NOTE: As I often do when I cook just for myself, I only used 2 steaks, but made the sauce for four. The cost analysis is for four people as well.

Here is what you do:

Sprinkle both sides of the steak with salt and pepper.

Slice the onions. Chop the chives. Clean and slice the mushrooms.

How to Clean, Prep, and Slice Mushrooms

Heat 2 tablespoons of the butter in non-stick skillet over medium high heat.

Add steaks to the skillet and cook 3- 5 minutes turning them one time during the cooking.

Remove the steaks from skillet and keep warm by covering with aluminum foil.

Add remaining butter to the skillet. Add the onions and cook over medium heat until they start to brown.

Then add the mushrooms. Cook until heated through stirring occasionally 2-3 minutes.

 

Stir in sour cream and heat till warm and becomes a sauce. Do not boil.

Serve the sauce over the steaks. Sprinkle some of the chopped chives over the steaks.
