So All May Eat

Have you ever heard of a restaurant where there are no prices on the menu and where you can pay what ever you want for your meal? No businesses person would ever do that! Would they?

Well meet Brad and Libby Birky owners of the SAME Café in Denver, Colorado. This cafe operates just like that – you decide the cost of your meal.

In 2006 the Birky’s decided to live their dream. They scraped together some money and opened for business. There is a mix of patrons at the SAME Cafe  ranging from downtown workers looking for good food at  lunch time to the poor and the homeless.

“We’re not a soup kitchen; that’s important to understand. We don’t just hand out food,” Brad said. With even more fervor, he added, “Everybody should be able to have a good, healthy meal, whether they can afford it or not.”

“It’s not just the food,” Libby says. “Often, homeless people, people in need, don’t receive the same attention and care. Here, someone recognizes them, looks them in the eye, talks to them like they’re just as valuable as the next person in line. That’s why we do this.”

Today the SAME Cafe  is a non-profit community café. The Birky’s strive to make the volunteers and their café patrons feel they are a community.

There are no prices on the menu board at the cafe. Instead, people can leave  any amount they think is fair or that they can afford in a donation box on the counter. Some people leave a little cash  in the donation box and others leave far more than any restaurant would ever ask. If someone can afford nothing they can work for an hour mopping floors or bussing tables in return for the meal.

According to one profile of the restaurant, “One man ate a modest meal last fall and quietly left a $500 check in the box…..Another man routinely walks in, refuses to eat and leaves a small cash donation. He’s homeless.”

All food served at the café is made from scratch. Much of the food is grown locally. The SAME Cafe serves two different soups, two different salads, and two different pizzas daily, all  made from organic, fresh and healthy ingredients.  You can learn more about this incredible couple and the SAME Café in the following video.

Today we applaud Brad and Libby Birky and the SAME Café for their caring and their generous spirit.

Featured Recipe     English Muffin Pizzas

Since the SAME Café’s daily menu always includes pizza this would be a good time to share some easy and inexpensive pizza recipes with you.

There is no need to spend a lot of money to buy salty and greasy pizza at the pizza shop. There is no need to get frozen pizza with its preservatives,  high salt and fat content either. You can make easy, inexpensive, and much healthier pizza at home in your own kitchen using English Muffins or tortillas. They are  so easy to make even your children can make these pizzas.

This is what  you will need for 3 people:

3 English muffins

6 tablespoons tomato paste or pizza sauce*

6 tablespoons shredded mozzarella cheese

6-8 fresh mushrooms cleaned and sliced

*tomato paste is less expensive

Picture includes ingredients for both pizzas

Here is what you do for 1 pizza:

Spread about 1 or 2 tablespoon of pizza sauce or tomato paste on one side of each half of a split English muffin.

NOTE: I prefer tomato paste. Tomato sauce and even pizza sauce is too runny and soaks the muffins making them soggy. Plus tomato paste is less expensive.

Add a few sliced mushrooms to both halves.

Top each half with about 2 tablespoons of the mozzarella.

If you can afford it, or if you have some in your spice pantry already, add a few fennel seeds or a sprinkle of oregano on the pizzas. Fennel will impart a wonderful sweet licorice flavor to the pizzas and oregano will add a little Italian flavor to the pizzas.

Place in a 350 degree toaster oven or a regular oven until cheese melts, about 3-5 minutes.

Serve with a salad or fruit.
