Sly Lemon Pie

Since I have a new refrigerator and freezer I made another Sly Lemon Pie. This time it froze the way it is supposed to.

This is so easy and so quick you could make it yet today.

Takes about 10 minutes to prepare and another 2 hours to freeze.

Sly Lemon Pie
This is what you will need for 6 servings:

1 quart of plain vanilla ice cream softened

1 – 6 ounce can of frozen lemonade thawed

1 – 9 inch graham cracker pie shell

1 lemon

zest of ¼ lime

 

Here is what you do:

Let the ice cream soften; and the lemonade thaw.

Combine the softened ice cream and the thawed lemonade in a bowl and mix well.

 

Pour into the graham cracker pie shell.

 

Freeze until firm, about 2 hours.

 

Let stand 10 minutes before serving.

Garnish with lemon moons and whipped cream if using. Sprinkle some lemon and lime zest on the whipped cream for color.

Tart and sweet at the same time. Really refreshing on a hot day.

NOTES and COMMENTS: You can use frozen orange juice or frozen limeade, even frozen grape juice to make what ever flavor pie you like. I have not tried this dessert with grape juice. But the other two are pretty good.

I am dating myself with this recipe. I used to be able to find 6 ounce cans of lemonade in the store. Not any more. I am forced to buy a 12 ounce can. So I use half in this recipe; sometimes a bit more and then make lemonade with the rest. Or if I have a crowd over, I make two pies. As for making lemonade, I prefer to make my own. It is not hard to make. And it is much cheaper.

Same thing is true with the ice cream. I used to be able to easily buy 2 pints of vanilla ice cream. Not so much today. Very few manufacturers make pints any longer. About the smallest size you can get is 1.5 quarts. So I am forced to buy more than 1 quart or forced to buy expensive brands who still sell ice cream in pint containers. And it is getting harder to find just plain vanilla, too. It has swirls in it, or extra beans, or so the labels says.

It is all about the super-sizing of our food offerings and/or the trick now is for manufactures to put less of an item in the same size packaging. For instance, one ice cream manufacturer stopped making half-gallon size ice cream containers. Instead they kept the same size container but only put in 1.5 quarts of ice cream. Cost? The same as for a full gallon.

Now onto the costs of this dessert.

Costs

1 quart of vanilla ice cream softened          $5.96

1 – 6 ounce can of lemonade thawed         $0.47 (12 oz./$0.94)

1 – 9 inch graham cracker pie shell            $1.50

1 lemon                                                   $0.33

zest of ¼ lime                                         $0.15

Total Cost = $8.41
Cost per slice = $1.40

If you use whipping cream add another $1.99  into the total cost. Per slice cost is then $1.73.

art. Other stores sell Hagan Daz ice creamn for twice as much or more.  The wide variation of costs for the items in this recipe at the three different stores I checked was amazing.
