Featured Recipe       Au Gratin Potatoes

Au Gratin potatoes are one of life’s most pleasurable tastes. They are easy to make but do take a little time baking, about an hour. They are lovely for company or Sunday’s best.

These potatoes go well with everything: beef, ham, pork, lamb. 

You can also play around with the cheese using any combination that please you.

This is what you will need for 4 people:

1 ½-2 pounds potatoes

1 tablespoon butter

¼ cup butter

6 slices bacon

½  cup shredded Mozzarella

½ cup grated Parmesan

1 cup whipping cream

3-4 green onions

Salt and pepper to taste

Here is what you do:

Preheat the oven to 350 degrees F.

Dice the bacon and fry till crisp.

While the bacon is frying, butter a baking dish with the tablespoon of butter.

Also while the bacon is crisping, cut the remaining butter into very small pieces. Don’t worry if the butter is not cut into perfect little pieces or squares. It is going to melt anyway. No one will see them.

Place the pieces in the fridge until it is time to use so they don’t melt.

NOTE: It is best to deal with the butter now rather than after you peel and slice the potato. Otherwise, the potatoes may brown before you can begin layering them in the baking dish.

When the bacon is crisp remove from the skillet and drain on paper towels. Set aside.

Save the grease for another use. See. I really do practice what I preach.

Peel and then cut the potatoes into ¼ inch thick slices.

Place a layer of potatoes in the buttered baking dish……………………

………………………..and sprinkle with salt and pepper to taste. Sprinkle some of each of the cheeses, some bacon and some of the butter pieces over the potatoes.

Continue layering potatoes, salt and pepper if so desired, each of the cheeses, bacon, and the butter until you have used up most, but not all of the potatoes.  Top with a layer of  just potatoes.

Pour the cream over the all of the potatoes.

Bake for about an hour, maybe and hour and 15 minutes, until the potatoes are tender and golden brown on top.

Right before you take the potatoes out of the oven wash and slice the green onions.

Let stand for 5 minutes before serving.

Top individual  plates of the potatoes with some sliced green onions.
