Peach Melba For Father’s Day

 

 

Tomorrow, Sunday June 20th (2010) is Father’s Day. So I thought I would share a really fast, easy, delicious, and very elegant dessert recipe you can make for your dad on his special day.

According to Wikipedia  Peach Melba is a classic desset that was created in the 1890’s by the French chef, Auguste Escoffier at the Savoy Hotel in London.  It was named in honor of an Australian opera soprano, Dame Nellie Melba.  This classic dessert combines two favorite summer fruits: peaches and raspberry sauce with vanilla ice cream.

What’s not to like? 

Who would ever think getting 2 of your 5+ servings of fruits and vegetables every day could be so decadently delicious? Isn’t it interesting that eating fruit is so easy when paired with ice cream? I wonder why that is.

The Peach Melba recipe below grills the peaches. The peaches can be grilled outdoors on a charcoal or gas grill, on an electric grill, or a grill that fits over the burners of your stove. An alternative is to roast the peaches in an oven in a tablespoon or two of butter for 15-20 minutes at 400 degrees.

You can also make this dish with canned peaches and frozen raspberries.

When assembling the peach melbas, you may want to consider using an assembly line since as soon as you add the ice cream to the warm peaches the ice cream starts to melt. So you want to get the dessert assembled and to the table  as quickly as possible in order to have the ice cream melt as little as possible.

This is what you need for 4 people: 

2 peaches

1-6 ounce container raspberries

1 tablespoon sugar

1 generous squirt of lemon juice

4-8 scoops vanilla ice cream

Sliced almonds

This is what you do:

Place the raspberries in a bowl and add the sugar and the lemon juice.

Using a fork mash the strawberries till you have a sauce. Do not mash too much. You want to have some hunks of raspberries visible.

Toast the almonds over a low heat being careful not to burn.

Grill the peaches on a medium to medium hot grill for about 5-6 minutes until you have nice grill marks on them and they are tender, turning once during the grilling.

Place the peaches in individual dessert bowls and let cool down a minute or two. Then quickly add the ice cream,  the raspberry sauce, then top with the almonds. 

 

 

That’s all. Doesn’t seem right, does it, that something so delicious is also soooo easy to make?

Definitely my kind of recipe.
