Featured Recipe        Easy Roast Chicken

Saw this recipe on Facebook several weeks ago. Tried it once and it is a winner. Best of all it is quick and easy and so worth cranking up the oven to roast on a hot summer’s day. Just crank up the air conditioner a bit.

I could not make any hard and fast determination whose recipe this is. The Facebook page I found it on did not say where they found it. Internet searches lead to a dead end. The website cited under the picture of the finished dish was a baking website. Did not find this recipe on that site either.

Don’t tell anyone. I am sharing this secret with only you.
The chicken is even better when cold – did you hear picnic time?

This is what you will need for 4 people:

1 whole chicken cut up – about 8 pieces

2 tablespoon soy sauce

1 tablespoon light brown sugar

2 tablespoons red wine vinegar

3 tablespoons olive oil

4 shallots chopped

2 cloves garlic chopped

Good handful of fresh parsley

Salt and pepper to taste

Here is what you do:

Heat oven to 425 F.

Chop the shallots and press the garlic.

Pat some of the moisture from the chicken with a paper towel. Season the chicken with some salt and pepper and place the chicken in a heavy baking dish.

Combine all marinade ingredients (Essentially everything except the chicken and the parsley.) and whisk well.

Pour the marinade over the top of the chicken. Turn the chicken several times in the marinade to make sure it is well coated with the marinade.

Make sure the chicken is skin side up, then place in a 425 F oven. Roast for 30 minutes until the chicken begins to brown.

Remove the chicken and baste the chicken again with the marinade.

Then turn the pieces of chicken over and place bake into the oven and roast another 10 minutes or so until the chicken is done, 165 F.

Now wash and roughly chop the parsley.

Remove the chicken from the oven and sprinkle the parsley over all.

Serve with some steamed red potatoes and a salad; and if it has not all evaporated, pour over more of the marinade.
