Injustice anywhere is a threat to justice everywhere. We are caught in an inescapable network of mutuality, tied in a single garment of destiny. Whatever affects one directly, affects all indirectly. Never again can we afford to live with the narrow, provincial “outside agitator” idea. Anyone who lives inside the United States can never be considered an outsider anywhere within its bounds.

I Have a Dream Speech

I say to you today, my friends, that in spite of the difficulties and frustrations of the moment I still have a dream.  It is a dream deeply rooted in the American dream.

I have a dream that one day this nation will rise up and live out the true meaning of its creed: “We hold these truths to be self-evident: that all men are created equal.”

I have a dream that one day on the red hills of Georgia the sons of former slaves and the sons of former slave owners will be able to sit down together at a table of brotherhood. I have a dream that one day even the state of Mississippi, a desert state, sweltering with the heat of injustice and oppression, will be transformed into an oasis of freedom and justice. I have a dream that my four children will one day live in a nation where they will not be judged by the color of their skin but by the content of their character. I have a dream today.

Ham Turkey and Cheese Open-Face Sandwich

I like sandwiches. They are quick and easy for any meal from breakfast right through a midnight snack.

Everyone knows the story of the Earl of Sandwich. However, sandwiches have really been around since at least the first century, B.C. (History of Sandwiches) Sandwiches really took off when pre-sliced bread was sold in stores.

Today’s recipe is filling enough that when served with a salad and/or some soup, it is a quick and inexpensive and dinner.

I am sharing a process with you today. You can use any kind of bread, meat, cheese or other fillings that you like. You can also make this sandwich with left over ham or turkey.

Today I am going to make two different sandwiches: One using pears and the other using apricot preserves.

This is what you will need for 2 people:

About ½ loaf crusty Italian bread

4 slices of deli ham

4 slices of deli turkey

2 slices of white cheddar cheese

About ½ tablespoon olive oil

Optional Extra Fillings

½ pear (¼ for each sandwich)

OR

2 tablespoons apricot preserves

Here is what you do:

Preheat the broiler.

If using the pear wash it and cut in half. Cut out the seeds. Slice very thinly; or as thinly as you can without nicking your fingers.

Cut the bread in half  like for a sub sandwich. Using a pastry brush, brush the cut side with a bit of the olive oil.

Toast the bread until lightly crisp outside but tender inside.

NOTE: I use my toaster oven/brolier to make the sandwiches, rather than the broiler in my oven.

Fold a slice or two of turkey onto the toasted bread.

If using pears, place a few pear slices on top of the turkey.

Or

If using the apricot preserves, spread the preserves over the turkey.

Then fold a slice or two of the ham on top of the pears, or preserves. If you are not using either pears or preserves, just fold the ham on top of the turkey.

Lay a slice of the cheese on top of all. You may want to cut or tear the slice of cheese in half to fit the length of the bread like I did.

Return to the broiler and cook until the cheese melts and begins to bubble slightly.

Serve warm with a salad and/or soup.

If you make both sandwiches, cut them in half and sample both.

2 slices white cheddar cheese       $0.94

About ½  tablespoon olive oil        $0.23

Total Cost = $5.52

+Plus add in the cost of one of the optional items below.

Cost per sandwich = $2.76

This cost is much cheaper than buying even a fast food hamburger these days.
