Martha Vs Maxine ~ The Cook Off

Martha’s Way

Maxine’s Way

Stuff a miniature marshmallow in the bottom of a sugar cone to prevent ice cream drips. Just suck the ice cream out of the bottom of the cone, for Pete’s sake.
To keep potatoes from budding, place an apple in the bag with the potatoes Buy Hungry Jack mashed potato mix; keep it in the pantry for up to one year.
When a cake recipe calls for flouring the baking pan, use a bit of the dry cake mix instead and   there won’t be any white mess on the outside of the cake. Go to the bakery!!!! They’ll even decorate it for you.
If you accidently over salt a dish while it is still cooking, drop in a peeled potato and it will absorb the excess salt for an instant “fix-me up.” If you over salt a dish while you are cooking, that’s too bad. Please recite with me the real woman’s motto: “I Made it and you will eat it and I don’t care how bad it tastes!”
Wrap celery in aluminum foil when putting in the refrigerator and it will keep for weeks. Celery??? Never heard of it!
Brush some beaten egg white over a pie crust before baking to yield a beautiful glossy finish. The Mrs. Smith frozen pie directions do not include brushing egg whites over the crust.
Cure for headaches: take  a lime, cut it in half and rub it on your forehead. The throbbing will go away. Take a lime, mix it with tequila, chill and drink!
If you have a problem opening jars, try using latex dishwashing gloves. They give a non-slip grip that makes opening jars easy. Go ask that very cute neighbor if he can open it for you.
Don’t throw out all that leftover wine. Freeze into ice cubes for future use in casseroles and sauces. Left over wine???????????

Featured Recipe    Cinnamon Candy Baked Apples

Fall is apple time. I love apples any way you fix them: forbidden fruit, candy apples, caramel apples, apple juice, Amish apple butter, Apple vinegar, Apple pie, pumpkins, tarts, turnovers, apple salads, apple sauce.

What did I forget?

There is the apple of my eye. One keeps the doctor away. There is Adam’s apple. An apple for the teacher. Bobbing for apples.

And of course there is the Big Apple.

Without an apple we would know nothing about gravity!

There are Apple computers and phones.

What did I miss?

This is what you will need for 2 apple desserts:

2 baking apples

4 tablespoons brown sugar

2 tablespoons white raisins or currants

2 tablespoons red cinnamon candies *

* If you can find red hots these apples are  even more delicious. This year I could find none. 🙁

NOTE: Recipe can be doubled or tripled.

Here is what you do:

Heat the oven to 350 F.

Core the apples using a fruit baller and knife.

Score the top of the skin, or just peel a bit of skin off the top of the apple like I do, with a vegetable peeler or knife.  The make 4 or 5 small slits from top of apple down to where skin is. This helps prevent the skin from splitting while baking.

Place the apples in a baking dish.

Fill each center with and equal amount of the brown sugar and the currants, and last of all the cinnamon candies.

Pour water into the pan to a depth of one-fourth inch.

Bake in the oven  until apples are tender when pierced with a fork, about 30 to 40 minutes.

Place some of the candies in the water at about the half way mark of baking.  As the candies melt spoon or brush some of  syrup over the apples several times during the baking.

Serve warm as is or with a scoop of ice cream of your choice.

Bon appétit!!!

If you want to make an apple pie from scratch, you must first create the universe.
