Steve is not well known outside of England. In fact, he is not that well known there either. Yet he is an accomplished magician and illusionist.

He has been on British TV and walking on the Thames Rives was a publicity stunt for his new TV show.

I think we will be hearing more from this young man in the future.

Featured Recipe      Tuna Zucchinni Patties

Growing up I never cared for tuna patties that much when my mother made them. Mostly because I thought they were pretty bland and tasteless. Some people take care of that by making a tasty sauce to drizzle over them.

Salmon patties have more far more flavor.

But these tuna patties have zucchini in them. I thought that was really odd at first. But I like zucchini so I tried them. They were really good, different; very refreshing, especially on a hot summer day.

I got this recipe from a colleague I used to work with. Her mother made it when she was a child. I am pretty sure this must have been a depression recipe. I think the zucchini was a tuna stretcher; and I am betting they grew the zucchini and probably the green onions too on their northern Ohio farm which meant these patties cost next to nothing to make.

They cost next too nothing today too……only $0.90 a patty.

I have been thinking about this recipe now that beef is set to rise again this year after the so much corn has wasted away in the drought. Much of the corn in Ohio is still in pretty good shape. But the corn on the plains is faring much worse.

So expect corn to rise this fall too.

And of course there are those who will exploit any real or perceived crisis to make a big buck.

So because of all these things I thought of this very inexpensive recipe when thinking about what recipe to share with you today.

This is what you will need to make 4 patties:

1 medium zucchini

1 can of solid tuna fish packed in water:

     1 teaspoon of the liquid

3 green onions

½ cup bread crumbs

1 egg

1 lemon:

     1 teaspoon lemon juice

     Use rest for slices

2-4 tablespoons oil

About 4 tablespoons corn meal

Salt and pepper to taste

Here is what you do:

Wash the zucchini and the green onion. Cut about an inch off the top of the zucchini and using a box grater, grate the zucchini and place in a bowl.

Cut the root stem off the green onions and about an inch of the green part of the onion. Then cut the onions in half length wise. Then slice the onions. Throw them in the bowl with the zucchini.

Whisk the egg lightly and add it to the zucchini and green onions. Add salt and pepper to taste.

Add the bread crumbs and the lemon juice to the bowl.

Add 1 teaspoon of the liquid from the tuna fish to the bowl.

Now drain the tuna completely and add the tuna fish to the bowl.

I start out mixing the ingredients together with a fork. If you wish you can go straight to the hand method.

Then I use my hand to mix everything together very well.

In your mind or on the actual tuna mixture in the bowl evenly divide the mixture into fourths.

Sprinkle a plate with the corn meal.

Then shape each fourth of the tuna-zucchini mixture into rounded patty. Placel each patty on the corn meal and pat the corn meal onto the patties. Roll the patty over and cover the other side too. Add more corn meal if needed. This just helps to keep the patties from breaking apart.

Heat the oil in a large skillet over medium high heat. Carefully add the patties and leave them alone. Do not flatten them. That will cause them to break apart at this point.

Cook them until they start to brown, about 5-6 minutes. You can tell with the patties are starting to brown as you can see it on the bottom edges of each patty. When you see the brown edges then carefully turn the patties over. Isn’t that a nice brown on the tuna patties?

Once the patties have been turned over you can flatten the patties a little bit. Cook the other side till it is brown too, another 5-6 minutes.

When the patties are brown on the second side, you can serve them with a salad or other veggies of your choice. I always serve them with lemon slices too.

     Use rest for slices

2-4 tablespoons oil                         $0.18

About 4 tbspns corn meal                $0.10

Salt and pepper to taste

Total cost = $3.59
Cost per patty = $0.90

    I wonder how these would be with canned salmon instead of tuna? I have never liked canned tuna, but salmon patties are a favorite of mine. Seems like I could take this recipe and try it with salmon instead. May have to adjust the amounts a bit?

      Tuna is bland and needs jazzing up I think. Salmon has much stronger flavor, especially wild caught salmon, which is what I used. I tried it once and did not care for it. But you may. Try and see. And let me know. Salmon and zucchinni is prettier though. 🙂 LOL Pink and green looks good together.

    I am actually making my salmon cakes tonight for supper. I will find out if Mom has a zucchini that I can have to take one and try it. I don’t need to make them all that way, just one would be enough to see if I like it.
