Fruity Sorbet

Just a recipe today.

I have been a little busy, but mostly I have just been goofing off and having fun today. So I did not get around to writing anything for you.

Hopefully today’s recipe will make up for that.

This is a wonderful desert for hot and humid days. It is very cold and refreshing. It is made with ice cream; sorbet to be exact. And it has fresh fruit in it as well.

Because of the fruit you can consider this a health food. That’s my story and I’m sticking to it! We ice cream lovers have to stick together.

Featured Recipe    Fruity Sorbet

This recipe is so neat. Like with many recipes I use I am showing a technique. You can use any flavor of sorbet that you like and any fruits you like.

The basic recipe can easily be doubled.

I used mango sorbet and frozen blackberries and chopped banana.

This is what you will need for 6-8 people:

2 pints of sorbet

1 small package of frozen fruit

1 firm banana

Here is what you do:

Soften the ice cream. I usually do that by simply putting it  in the refrigerator for an hour or so. But you can also use the microwave. If using the microwave be sure to soften only. Do not melt.

Partially thaw the fruit. If necessary drain the fruit.

Chop the banana. I do that by cutting it into thirds first cross wise. I can handle cutting smaller chunks of a banana rather than the whole long thing.

Then cut each third into 3 slices lenthwise……..

…..and then into chunks.

Place the softened ice cream in a bowl………

And stir the softened sorbet until soft and smooth.

Now add the fruit. Start with half the package of fruit. Pour it into the bowl. Then add the chopped banana. Reserve some of the frozen fruit for garnish.

Gently fold everything all together. If there is not enough fruit in the mixture add more frozen fruit. I had to add more fruit as you can see in the picture below.

When all fruit is folded into the sorbet pour the mixture into a dish……….

spread evenly in the pan………

…..and then place in the freezer for no less than 3 hours.

When frozen scoop out some of the Fruity Sorbet and place in a dessert dish, add some of the reserved fruit and serve.

Ahhhhhhhhhhhhh! Instant cooling. Instant refreshment!!

Bon appétit
