Cran-Apple Turkey Skillet

 

 On the day before Thanksgiving I know you are super busy. So I won’t take up much of your time.

So just a recipe today.

Today I share the obligatory Day-After-Thanksgiving recipe.

And hopefully it is a useful one to since it does use leftover turkey; or chicken, pork or even ham.

It is also SO quick and easy it is perfect the day after you slaved over the stove all day for Thanksgiving. No slaving here.

Featured Recipe       Cran-Apple Turkey Skillet

 This recipe is a Taste of Home recipe. Best of all it meets More Thyme Than Dough’s requirements: delicious, fast, easy, and cheap.

And since it is a one-pot dish there is also little clean up. A near perfect recipe all the way round!

This recipe is so delicious it actually makes you look forward to eating left over Thanksgiving turkey. A miracle to be sure.

The ingredient list below is for 6 servings and the cost analysis is for 6 people.

However, as you might be able to tell from the pictures, I halved the recipe for myself, cause if made the full recipe I would be eating the same thing all week morning, noon, AND night. This way I have either one more dinner or 2 lunches.  Ahhh, the joys of being single…….and that is not snark, just reality.

You could also make this recipe with cooked chicken or pork.

This is what you will need for 6 people:

2 medium apples                               

¾ cup apple cider or juice

¾ cup chicken broth

1/3 cup dried cranberries

1/8 teaspoon ground nutmeg

3 cups cooked turkey

1 package 6 ounces corn bread stuffing mix

Here is what you do:

Peel the apples and thinly slice them.

Dice the turkey.

In a large skillet combine the apples, cider, broth, cranberries, and nutmeg. Bring to a boil.

At this point my kitchen smells like apple pie right now. Mmmmmm!

Reduce heat; cover and simmer for 4-5 minutes or until apples are tender, stirring occasionally.

Stir in turkey and stuffing mix and mix well.

Cover and cook for 2-3 minutes until heated through.

Serve with a salad.

*If using leftover turkey; If not, 3 cups of cooked turkey will cost you in the neighborhood of $8.00 or more.
