Eggs that are 4 or 5 days old are the easiest to soft boil.
Bring the eggs to room temperature. That is take the eggs out of the refrigerator and let sit on a counter for about 30 minutes.
Over medium heat bring a pot of water to a boil. You will see little bubbles rising from the bottom of the pan. When you see these little bubbles lower the eggs into the water one at a time. Do not bring to a full or roiling boil.
Set a timer for 3 minutes.
When the 3 minutes are up use a spoon and rotate the eggs.
Cook for 2 minutes more.
Remove the pan from the heat and let sit for 1-2 minutes depending upon how runny you want your egg.
Then pour the hot water off and immediately run cold water over the eggs.
When they are cool enough to handle using and a spoon or a knife crack the eggs in a few places and let sit in the water for a minute or two.
Then under cold running water carefully peel the egg.
