Breakfast Part 2


Yesterday I mentioned my father was a breakfast person. One of the breakfast recipes he made was this one. He did not have  a name for it. He just made it.

He would chop up a couple slices of bacon, fry them up till crisp, and then would add one or two eggs scrambled and mix it all together. I love bacon and eggs this way. This is really delicious with garlic toast. If I have them in the house I will wrap this concoction in a tortilla. If I have cheese in the fridge I also add some cheese too. I guess you could say this is my version of a drive through window breakfast. Or in other words – Real Fast Food.

Featured Recipe     Bacon and Egg Tortilla
This is what you will need for 3 people:

6 eggs

3 tortillas

6 slices bacon

3 ounces shredded cheese

Here is what you do:

Shred the cheese. Set aside.

Cut the bacon into chunks.

Add the chopped bacon to a hot skillet.

Fry the bacon until it is very crisp. Drain off excess fat.

Add the scrambled eggs…..

………….. and cook, stirring with a spatula until they reach the consistency you like. If you are using salt (I don’t. Bacon is salty enough) add it and some pepepr too at this time.

Place the cooked eggs on the tortilla and then add the cheese.

Wrap the tortilla up, eat and enjoy.

NOTE: I buy bacon ONLY when it is on sale. I also buy center cut bacon. It is a bit more expensive. But it is worth it because it has less fat.

3 ounces cheese      $0.48

Total cost:  $3.08
Cost per person:  $1.02
